Baked Bay Scallops with Spinach Recipe
Serves: 4
Approx. 450 calories/serving
Ingredients:
1 pound bay scallops
2 tbsp EVOO
1 tbsp butter
Pink Himalayan sea salt & pepper
2 cloves fresh garlic, minced
2 tbsp fresh lemon juice
2 tbsp chopped Italian parsley

2 cups baby spinach, set aside
2 cups cooked brown rice, set aside
Directions:
Combine the first 7 ingredients in a casserole dish and bake at 400 degrees Fahrenheit for 15 minutes. Remove from oven and add in 2 cups of baby spinach. Mix to combine and bake for 5 additional minutes.
Serve over brown rice.
